Smoked Gruyere Butternut Squash Soup

Ingredients
- 2 T olive oil
- 2 T butter
- 1 C sweet onion, diced
- 2 cl garlic, minced
- 1 pnch red pepper flakes
- 4 C butternut squash, cubed
- 1/4 t smoked paprika
- 1/8 t nutmeg
- 2 C chicken stock
- 6 oz smoked gruyere cheese, grated
- 1/2 C half-and-half
- 2 T chives, snipped
- Option: substitute 1 C white wine for 1 C chicken stock.
Instructions
- Cook the onion in the butter and olive oil until softened. Add the garlic, pepper flakes, squash, paprika and nutmeg. Cover and cook until the squash has softened slightly. Add the stock and simmer until the squash is completely tender.
- Puree the ingredients in a blender until smooth, return to the pot and season to taste. Melt in the cheese, then stir in the half-and-half.
- Plate, garnish with chives, and serve.
